This homemade lemon pie is great for diabetics.

 

 Ingredients

In shortcrust pastry

  • One and a half cups of flour (about 3.5 dl)
  • 100 grams of butter
  • Half a teaspoon of ground stevia
  • 3 egg yolks
  • 3 tablespoons ice cold water

For lemon pie filling

  • 5 lemon juice
  • Half a teaspoon of ground stevia
  • 75 grams of corn starch (corn flour)
  • 6 egg yolks
  • 4 egg whites
  • 45 grams of butter
  • Half a glass of cold milk
  • 3 walnuts in pieces

Instructions for making lemon pie

1. Start by lubricating the pan with butter. This prevents the pie from sticking to it.

2. Preheat the oven to 170 degrees Celsius.

3. Prepare the shortcrust pastry, which is very simple: Knead the butter and flour with your fingers in a bowl so that you get a smooth mixture. Add stevia, 3 egg yolks and enough water to make the dough soft and all the ingredients are mixed together. Mix well and shape the dough into a ball. Cover with plastic wrap and leave in the refrigerator for 15 minutes.

4. After 15 minutes, check that the dough is in perfect shape, ie softer and well-formed. In this case, you can put it in the pan. To do this, make sure that it is shaped like a loaf and sticks well, but be sure to leave the edges at least 2 cm high. The edges should be high enough to fill the filling.

5. Bake the base for 25 minutes and when done, allow to cool to room temperature.

6. Now it’s time to make a lemon filling, which is also easy and simple: Start by squeezing the juice from the lemons and adding half a teaspoon of stevia.

7. Now heat the juice in a saucepan and bring to a boil.

8. Take half a glass of cold milk and add 75 grams of cornstarch. Stir well to remove dumplings. When there are no more lumps in the mixture, add it to a saucepan of boiling lemon juice. The mixture gradually thickens, thus avoiding annoying clumps in the icing.

9. Stir while the mixture thickens. Next, add the egg yolks and butter. Do not stop mixing.

10. When the mixture is soft, remove it from the stove and allow to cool to room temperature.

11. Then pour this delicious mixture over the base and bake for another 15 minutes.

12. Now it’s time to make a meringue. To do this, beat the egg whites until they are a stiff foam. When the foam is ready, decorate the pie with it the way you want. To finish the pie, you can put pieces of walnut on its surface, they give the pie a very delicious extra flavor.

13. Bake the pie in the oven for a few more minutes until the meringues are golden. Serve the pie on a large serving dish where it looks great!
